Seared Ground Turkey and Zucchini

During the warmer months, zucchini is a great addition to your diet. While it can be found at the grocery store, a trip to the farmer’s market will often result in some fresh local zucchini that is rich in color (yellow to deep green) and packed full of benefits.  At just 21 calories per cup, it’s hard to go wrong with zucchini. This Seared Ground Turkey, Tomato, and Zucchini is just one of the many delicious recipes out there. You can also cut into into strips and pair it with guacamole or hummus for a great snack!


1 lb 96% lean ground turkey

1 large zucchini, sliced

1 large tomato, chopped,

½ medium onion chopped

3 cloves garlic, chopped

1 tbsp olive oil

Salt and pepper to taste
